A Few Holiday Recipes

Hello there loves. It is the holidays, and I am so happy about that! It's the Monday after Thanksgiving in the U.S. My husband just went back to work today. We had a lovely few days off. We relaxed a lot and made a few yummy dishes.


Thursday was Thanksgiving and such a special holiday. We spent the day with my in-laws. I had a few small plates of food and we opened our Christmas presents early.


I felt like everyone ate endlessly, and it wasn't until late in the evening after I was getting a growing migraine that I started munching on carrots and celery.


We did Christmas on Thanksgiving at my in-laws because our brother and his girlfriend may not make it back for Christmas with Covid cases rising.


And we will see what happens with Covid on who else we will visit. I haven't gotten to meet my new nephew yet, and we have too much precious cargo to take chances as much as I would love to get down there to love on him. We will just have to see what happens in the next couple of weeks.


I made a new cranberry sauce recipe.

 

Cranberry Orange Sauce


Ingredients:


- 12 ounces of fresh cranberries, about 3 cups


- 1 cup of no sugar added orange juice


- 1 teaspoon of orange zest


- 1/2 cup of sugar


Directions:


Mix all the ingredients in a small saucepan and turn on medium-high heat until the cranberries have popped and started liquifying.


Then turn down the heat to a simmer (I turned our glass stove top down to 1) for 10 minutes, stirring regularly.


Let cool and keep refrigerated, you can serve cold, room temperature or hot.



 

Very simple and I received a similar recipe from a friend just altering it for my husband's preferred tastes.


This is the only dish that I made for our Thanksgiving dinner.


We bought some stuff to make our own Thanksgiving meal in case we could not spend the day with family. But I think we could hold off on making any of that until closer to Christmas.


I will share those recipes with you then.


I am still not feeling like being in the kitchen still but I have made a few dishes since my husband was off for these 4 days and we needed to eat.

We made polish apples for my husband this last weekend too


Polish Apples are Green onions wrapped by lunchmeat with cream cheese in the middle. They are delicious, but I am not eating them this year.


I sure miss enjoying food. I have had times of the day when I genuinely love what I am eating and I can eat a large amount. But most of the time I am just eating because I know I need to, my stomach is just so queasy all the time.


I want nothing warm to eat and I know I shouldn't be eating anything cold.


Yesterday I made two shrimp and pasta dishes for the 3 of us. I will share how I made those both here as well since I am a big fan of one sauce and my husband is a big fan of the other.

 

Shrimp and Crab Pasta


Ingredients:


- 2 tablespoons of olive oil


- 4 tablespoons of butter


- 1/2 tablespoon of garlic


- 1/2 tablespoon of basil


- 1 - 14.5-ounce can of diced tomatoes


- half of a small onion, diced


- 1 tablespoon of diced green onion


- 8 ounces of fully cooked shrimp


- 4 ounces of imitation crab meat


- fresh grated parmesan to taste


Directions:


Add olive oil and butter over medium heat in a saucepan, add the onions and cook down to desired texture.


Add the diced tomatoes, basil, garlic and bring to desired temp.


Add shrimp and crabmeat to get hot.


Serve over thin spaghetti with grated parmesan to taste.


 

Old Bay Shrimp and Crab Pasta


Ingredients:


- 4 tablespoons of butter


- 2 tablespoons of minced garlic


- 1 tablespoon of dried parsley


- 1 tablespoon of Old Bay Seasoning


- half of a small onion, diced


- 1 tablespoon of diced green onion


- 1/4 cup of chicken broth


- 8 ounces of fully cooked shrimp


- 4 ounces of imitation crab meat


Directions:


Add butter over medium heat in a saucepan, add the onions and cook down to desired texture.


Add the chicken broth, minced garlic, dried parsley and old bay seasoning, bring to desired heat


Add shrimp and crabmeat to get hot.


Serve over thin spaghetti.


 

Both sauces I made a 1 pound box of spaghetti and let us choose which sauce we wanted to have over our noodles. I also made half a loaf of garlic bread.


I really liked the tomato based sauce while my husband enjoyed the Old Bay seasoning sauce.


We will have what's left of it today for lunch, about half is still left of each sauce and the noodles.


I didn't take any pictures while making them yesterday so I have posted the leftovers in this blog.
