Salad
Spring Mix - 4 cups
Chicken - 1/2 cup
Peaches - 2 large
Frozen corn - 1/3 cup
Chopped onion - 1/4 cup
Chopped pecans - 1/4 cup
Dressing
1/3 cup of olive oil
3 Tbsp balsamic vinegar
1 Tbsp honey
1 tsp dijon mustard
Dash of salt
Dash of pepper
The salad was not exact measurements I tailored my salad to my ideal flavors.
The dressing put all ingredients together in a small container and then stir with a spoon until your desired texture.
This salad I decided to try for my husband's lunch yesterday because Monday night we went out shopping at Costco and bought a large spring salad mix. We also bought peaches and a rotisserie chicken so I was trying to find a way to mix each of them to make a tasty salad.
We just microwaved the cut up chicken and then I put the chicken and a bowl of peaches and a bowl of corn out for both of us to add the amount that we preferred. I added many more peaches than my husband did.
You can use whatever chicken you would like. Any corn that you would like, I just used frozen because that is my favorite corn.
My husband's only suggestion was to add cheese, I think a goat cheese or a soft crumbled blue cheese would go best with these flavors.
I am so happy with how this salad turned out that we will have it for lunch again today. It is easy and quick to make. I love salads but I don't eat them often enough because I rarely think outside of the box enough to come up with fun salads.
My goal is to create more summer salads that are fun and easy to make, I will share all of the hits with you.
